Chilli Tofu & Cashew Stir-fry

INGREDIENTS:

  • 1⁄3 cup (1 1⁄2 oz) cashews, roasted roughly chopped

  • 12 1⁄2 oz firm tofu

  • 1 spray olive oil

  • salt & pepper, to taste

  • 3 1⁄2 oz snow peas

  • 9 oz broccoli roughly chopped

  • 1⁄4 cup (2 fl oz) sweet chilli sauce

  • 1 1⁄2 tbs soy sauce (or tamari if gluten free)

  • 3 sprigs of fresh coriander roughly chopped

  • 3 cups (1lb 1 oz) pre-cooked brown rice cooked according to packet directions

METHOD:

  1. In a large frypan set over medium-high heat, toast cashews for a few minutes, and set aside.

  2. Crumble tofu into a bowl, spray with oil, season with salt and pepper and toss well.

  3. In the same hot frypan, add tofu and cook for a few minutes before tossing, then continue to cook for a few minutes more until beginning to brown.

  4. Add snow peas and broccoli and continue to cook for 4-6 minutes or until vegetables are tender-crisp.

  5. Add sauces and toss well.

  6. Divide between bowls, add rice and top with coriander and cashews to serve.
